Chimichurri Sauce for Grilled Chicken, Beef or Vegetables

Chimichurri is a thick, highly seasoned and slightly spicy South American herb sauce made of finely chopped parsley and garlic.  It is easy to make and traditionally serve with grilled meats and poultry, but also tastes great on grilled vegetables.

Serves: Makes 4-6 servings

1 cup flat leaf parsley, chopped and firmly packed
1/2 cup red wine vinegar
3 cloves fresh garlic
1/2 cup olive oil
1/4 cup fresh oregano, chopped
1 lemon, zest and juice (zest optional)
1 teaspoon crushed red pepper flakes
1/2 teaspoon ground cumin
1/2 teaspoon paprika or smoked paprika
1/2 teaspoon salt
Ground black pepper to taste


Using a food processor or blender, process all ingredients until well-blended – chunky, like a pesto, rather than smooth.

Serve on grilled chicken, steak or vegetables.
